I realized after I had finished my list that I had no meat dishes planned. Oops. Luckily, I have a husband who probably won't even notice. I'm making some homemade chicken broth this week so I figure if I want to I can throw some chicken in those veggie quesedillas. (quesadillas? quesodillas? eh...whatever!)
For those of you mom's out there who have a hard time coming up with healthy, cheap snacks for your kiddo's, I'm coming up with a list. This is something I have struggled with for a long time. My children get bored with the same old things and I thought it might be helpful to share some things that I have come up with. Maybe ya'll could share your ideas too! Have a blessed day!

I would love any of your favorite meatless recipes. I'm always on the lookout for good meatless recipes. I know you have a lot on your plate, but I love new recipes. I can't imagine your life right now. I hope you are able to sleep okay. I know my bladder always woke me up at night. It was ever annoying, but I guess it's God's way to prepare you for waking up in the middle of the night for a newborn.
I always get such great ideas from your blog Amanda. Your cinnamon apple cake from ages ago was a big hit at thanksgiving:) So thanks!
I have an easy dinner idea that I whip up when I can't think of anything to make--fritata. You can just saute whatever veggies you have on hand(leftover baked potatos sliced up are good too), add cheese, eggs and bake. I do a mediterranean version with sundried tomatoes, spinach, feta, and artichoke hearts. The possabilities are endless. It's great for lunch and dinner, and the leftovers are perfect for breakfast.
fill me in on the breakfast cookies! And any other healthy snacks, if you dont mind. :) I'm always on the lookout, too!
