One year later

I realized today that it had been a little over a year since I had made my breakfast vow, which was my commitment to wake up earlier in the morning and prepare breakfast for my family and stop feeding them convinience breakfast items. We had decided that bagged cereal and other processed breakfast foods were 1) too expensive and 2) too full of sugar (or more likely HFCS).

So, how has it been? Not bad at all! On mornings where I wake up a little later than usual I have my quick staples:
~oatmeal
~toast
~smoothies

And on mornings where I have a little extra time....and energy....I have other things I fix:
~pancakes
~scrambled eggs
~waffles

One thing that has been very helpful over this past year is to fix some things ahead of time. I have a baked oatmeal recipe that we all love that can be made the day before and warmed up in the morning and of course we all love breakfast cookies! It has also been really helpful to make baked goods in bulk. Usually if I bake something (muffins, quick breads, even pancakes and waffles) I double the batch and freeze the rest. This has been WONDERFUL for mornings that I've been sick or have been up all night with someone who is sick.

Over the past year I have only bought ceral twice. Once, when I had just had Kate and was recovering from my surgery and the second time when our house was overrun with the flu (me included!), which was just this past week. I knew I was doing pretty well with my commitment when Bradley had no idea what cereal was and kept calling it oatmeal. :)

Is anyone else out there trying to stay away from processed breakfast foods? What are some things that you regularly serve at your house?

Way to go girl! For breakfast we do a lot of the same things you do: oatmeal, toast, eggs, fruit. We do a little cereal. We also freeze pancakes, waffles, and french toast which makes a great quick breakfast.

We do something I sophisticated-ly call "egg-on-toast". I grew up doing it. You just butter a piece of toast. Press down in the middle, crack an egg on it, and cook it in the microwave for a minute. I know you don't have a microwave, but I'd bet you can do something similar on the stove. Nate's family cut a hole in a piece of bread, buttered it, put it in a pan, cracked an egg in the center hole, and fried it (turning both sides). We also do peanut butter banana sandwiches, sometimes with honey.

Smoothies are a great idea. I might try that.

It occurred to me this morning that I have been doing the same thing - avoiding prepackaged breakfast items! (although I have to confess I dearly love the sugary stuff myself! Bring on the crunch berries LOL).

But, I've been trying to save every penny I can squeeze out of my budget, so I've been making lots of homemade breakfasts. I work about 30 minutes from home (exercise every morning for at least 30 minutes) and still manage to get to work by 8AM! I make up muffins the night before and either refrigerate, already in the muffin tins, or freeze them and pop them in a freezer bag for baking later). I also take leftover HM biscuits, slice, butter and broil in the oven. Even if they are a little dried out and on their last leg, they are good toasted in the oven.

I use the "bread in 5 minutes a day" recipe to make english muffins, we eat oatmeal (I put it in the microwave before I get in the shower and then its not so hot that we can't eat it), keep HM french toast and waffles in the fridge or freezer for my daughter to put in the toaster. I also usually have a sliced loaf of HM bread in the freezer that we make peanut butter toast with. Occasionally though, we do we miss Captain Crunch so much that we actually cave in! I'm a product of the 70's, who grew up watching morning tv (and commercials) so what can I say??

But I'm making great strides to eat whole food made with whole real ingredients! Yippee!

Great job! We make our own cereal (rolled 9 grain flakes) and sometimes will have boiled wheat berries (put them in the crock pot before you go to bed) and you wake up to cooked wheat. I really want to start soaking oats at night to serve raw with plain yogurt. *Ü*

I know I haven't blogged in a while! I've just been so busy that, sadly, my blog has taken a hit. We are all well and good though!
